

Soleil Levant cheese selection (limited edition)
As part of our collaboration with Dassaï - Joël Robuchon, we imagined a selection of cheeses perfectly suited to sake.
In the Soleil Levant cheese selection ("rising sun"), there are the following cheeses and sake:
- Brun de Noix, a cheese made in Machecoul, whose rind washed with walnut liquor gives a perfect balance between nutty and milky notes
- Meule de Savoie, with aromas of dried fruits and butter
- Stilton which has a buttery and melting paste, will blend perfectly with the subtle and floral notes of sake!
- Fleur de Kyoto, an exclusive creation washed with sake lees and topped with a cherry blossom petal. It has delicate aromas and goaty notes
It is served with a Junmai Daiginjo sake, made of rice polished up to 45%, which will reveal umami, the fifth flavour of cheeses.
